1) Preheat the oven to 350, line a rimmed baking sheet with aluminium foil
2)pat the pork dry. season with salt and pepper, set aside.
3)in a small bowl whisk together worcestrshire, garlic ,1 tlb of the oil, 1 tlb mustard , 2 tsp thyme, and 1/2 tsp pepper
4)place 2 tlb of oil in a pan and sear the pork on all sides. Once it is seared place it on the baking sheet. Brush the worcestershire mixture over the pork.
5)place the pork in the oven. Cook for aout 18 minutes. the thermometer should read 140 degrees.
6) While the pork cooks , make the sauce.melt one tablespoon of butter in the same pan you cooked the butter . when the butter melts add the shallots, al spice 1 tsp thyme, 1/4 tsp pepper. Cook until shallots are softened about 1 minute. Add Vinegar , scraping the bottom of the pan to get any pork bits up. let it simmer until the vinegar is almost evaporated about 2 minutes then add the apple cider, 1 tlb mustard and 1/2 tsp salt. simmer until the sauce starts to thicken and is about 1/3 cup. remove from the heat and add two table spoons of butter stir until it is dissolved.
7) poor the sauce of the pork and enjoy!
