Directions
- Grab your favorite low carb, low calorie bread (4 slices). I recommend "5 Seed Keto Bread" for a great taste and bread thickness
- Prepare french toast batter. In a bowl, whisk together pumpkin puree, almond milk, liquid egg whites, vanilla extract, and as much pumpkin spice as you would like. Make sure you mix by hand, as you want to get all of the ingredients integrated into a wet batter without fluffing the eggwhites
- Individually soak each slice of bread in the batter, making sure you coat both sides of the bread and allow the mixture to seep into the bread for even better flavor
- Cook your french toast. On a stove top, cook your slices of french toast, making sure to turn over your toast to cook both sides evenly. I recommend 1-2 minutes per side to get the tops slightly brown
- Top with your favorite toppers! I recommend using a sugar-free, low calorie maple syrup and additional pumpkin spice seasoning
- Enjoy!
p.s. If you use the recommended bread and other ingredients, 4 slices will end up being slightly over 200 calories in total :)
